Diallyldisulfide CAS:2179-57-9
Diallyl disulfide delivers a typical garlic scent and acts as one of the main aroma components in natural garlic oil. It dissolves well in many organic solvents such as chloroform, acetone, and DMSO, making it suitable for various industrial applications.
This substance is also regarded as a potential allergen found in garlic and onions, which is important for allergy testing and related clinical research.
With a boiling range of 180–195°C, it shows stable chemical properties and can be used in a variety of industrial processing environments.
Diallyl disulfide is regarded as a common allergenic component found in garlic (Allium sativum) and onion plants. In clinical patch tests, all 13 patients with confirmed garlic allergies showed positive reactions when exposed to a 5% concentration of diallyl disulfide formulated in a petrolatum base.
